Cucumber Sandwich with Garlic-Dill Aioli

Looking for a way to get rid of some of your cucumber? Try our take on a popular, English teatime classic. It’s perfect for lunch or a mid-afternoon snack.

Cucumber Sandwich with Garlic Aioli

Cucumber Sandwich

Prep time: 5 minutes

Yield: 4 sandwiches

Ingredients:

2 medium cucumbers, thinly sliced

8 slices of desired bread (we recommend honey oat wheat bread), toasted, for 4 sandwiches

Aioli:

1/2 cup mayonnaise

1/2 cup sour cream

1 tablespoon lemon juice

1 tablespoon minced garlic

1 teaspoon dill

1 teaspoon chives

Directions:

  1. In a small bowl, combine mayonnaise, sour cream, lemon juice, garlic, dill and chives. Mix until just combined.

  2. On two pieces of toast of desired bread, spread the aioli onto both pieces, covering facing sides evenly.

  3. Arrange cucumber slices on one piece of toast. When bread is covered, place the other piece of bread on top and press down.

  4. (Optional) Carefully using a serrated knife, cut the sandwich from one corner to the opposite corner for triangular pieces.
